As executive chef of Winston’s Restaurant, Chef John Castro oversees a restaurant designed as the “capstone” practicum in the last quarter of studies for students in the National Center for Hospitality Studies. Chef Castro and his recipes have been featured in Chef Magazine, The Culinary Review, Louisville Magazine, Southern Living, Chef Educator Today, Mid-West Food Service News, the Lane Report, Splendor in the Bluegrass and the Louisville Courier-Journal. He has also appeared on HTV/Hospitality Television and Good Morning America with Emeril Lagasse. Most recently, Chef Castro and his brother were on “Throw Down” with Bobby Flay on the Food Network, as well as the Travel Channel on Taste of the Nation. He prepared and styled food for a Chef Magazine story about Chinese cuisine expert and author Barbara Tropp. Chef Castro has also been a guest chef at the famed James Beard House in New York City.
